Everything is better with bacon…. even these wonderful appetizers – perfect for a tailgate or watching the game at home with family and friends.

Bacon Cracker Appetizers

Club Crackers

Thin-Sliced Bacon

Grated Parmesan Cheese

Preheat oven

Lay crackers (as many as you want) face up on a cookie sheet.

Scoop about 1 tsp. of grated parmesan cheese onto each cracker.

Cut your package of bacon in half (or cut pieces individually)

Carefully so the cheese doesn’t fall off, wrap each cheese covered cracker in one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker.

Place the bacon wrapped crackers on a baking sheet that has a rack on it.

Do not turn. Drain on paper towels. Serve hot or at room temperature.

Cook’s note: You can also bake at 350 degrees F for 40 minutes if you’re in a hurry!

BBQ Bacon & Shrimp Skewers

Your Favorite Barbecue Sauce
30 large peeled, deveined shrimp
1/2 pound thick-cut bacon
10 wooden skewers

Wrap each shrimp with 1/2 bacon strip.

Thread 3 wrapped shrimp onto each wooden skewer.

Grill or broil shrimp skewers until bacon is cooked and shrimp is no longer translucent, but has turned pink.

Baste with barbeque sauce.

Return to heat to warm sauce. Serve with additional barbeque sauce, if desired.

Makes 10 shrimp skewers.

Bacon Wrapped Jalepeno Poppers

12 wooden toothpicks
4oz (half of 8-oz package) cream cheese, softened
2 tablespoons chopped fresh chives or finely chopped green onions
6 jalapeño chiles (2 to 3 inch), halved lengthwise, seeded
4 slices bacon

Heat oven to 375°F.

Line cookie sheet with foil or cooking parchment paper.

Soak toothpicks in small bowl of warm water to prevent burning.

In small bowl, mix cream cheese and chives.

Spoon mixture evenly into chile halves.

Cut each bacon slice crosswise into thirds.

Wrap 1 piece of bacon around each stuffed chile half; secure with soaked toothpick.

Place on cookie sheet.

Bake 25 minutes or until bacon is crispy and chiles are tender. Serve warm.
